Pork Loin with Blueberry Port Wine Sauce

Pork loin with blueberry port wine sauce

















Ingredients

  • 1 lb pork loin
  • 1 T red onion, diced
  • 1 c port wine
  • 1 c frozen blueberries
  • 1 T lemon juice
  • 4 T brown sugar
  • 1 tsp dry thyme
  • Salt and black pepper

Directions

1. Preheat oven to 375°F.

2. Season pork loin with salt and black pepper, and place on a pan to roast in the oven until internal temperature reaches 165°F.

3. In a medium saucepan, add oil and red onion. Sauté until translucent.

4. Add frozen blueberries and cook for 4 minutes stirring occasionally.

5. Add port wine and reduce by half.

6. Add lemon juice, brown sugar and dry thyme.

7. Cook together until sauce thickens to desired consistency.

8. Slice pork and add sauce on top.
