Grilled Chicken with Peach Salsa 

Grilled Chicken with Peach Salsa

Ingredients 

Chicken 

  • 12 oz chicken breasts, boneless, skinless 
  • 2 tsp olive oil 
  • 2 tsp balsamic vinegar 
  • 2 T brown sugar 
  • 4 oz peach salsa 

Salsa 

  • 2 oz peaches, frozen, diced 
  • 2 tsp red onion, diced 
  • 2 tsp cilantro, fresh 
  • 1 tsp lime juice 
  • 4 tsp honey 
  • ½ oz jalapeño, fresh (optional) 

Directions 

  1. Rub the chicken breasts with olive oil and balsamic vinegar. Sprinkle with brown sugar evenly and season with salt and pepper. 
  2. Preheat a grill to medium heat and lightly oil the grill plates. Cook the chicken for 5 to 6 minutes per side, or until internal temperature reaches 165°F. Let it rest for a few minutes. 
  3. In a small bowl, combine the diced peaches, red onion, cilantro, lime juice, honey and jalapeño (if using). Mix well. 
  4. Plate the grilled chicken and top it generously with peach salsa. Garnish with extra cilantro if desired.

Serves two. Nutrition per serving – calories: 370; fat: 9g; cholesterol: 125mg; sodium: 95mg; carbohydrates: 35g; protein: 38g
