Baked Lemon Salmon with Herbed Greek Yogurt
Ingredients
- 8 oz salmon
- 1 lemon
- 1 tsp olive oil
- ¼ tsp garlic powder
- Salt and pepper to taste
Sauce
- 2½ oz Greek yogurt, plain
- 2 tsp lemon juice
- ¼ tsp garlic powder
- ½ tsp basil, fresh, chopped
- ½ tsp thyme, dried
- ¼ tsp salt
Directions
- Mix Greek yogurt, lemon juice, garlic powder, chopped basil, thyme and salt. Put in the refrigerator to marinate. You can do this step a day in advance.
- Preheat oven to 375°.
- Slice lemon in half-moons.
- Place salmon on sheet pan. Spread olive oil on top of the fish and sprinkle with garlic powder, salt and pepper.
- Top each piece of salmon with a lemon half-moon slice.
- Bake in oven for 20 minutes or until internal temperature reaches 145°.
- Remove from oven and top with Greek yogurt herbed sauce.
