Cocoa-Spiced Salmon
Ingredients
- ½ c orange juice
- 4 4-oz salmon filets
- 1 T brown sugar
- 2 tsp granulated sugar
- 1 tsp unsweetened baking cocoa powder
- ¼ tsp cayenne pepper
- ¼ tsp cinnamon
- 4 T butter
- ½ orange, sliced
- Salt to taste
Directions
- Preheat oven to 375°F. Pour orange juice in a deep pan and marinate salmon. Let it sit at room temperature for 15 minutes.
- In a small bowl, combine sugars, cocoa powder, cayenne, cinnamon and salt. Place salmon on a sheet pan and rub salmon with spice mixture. Top salmon with orange slices and brush with melted butter.
- Bake in oven until internal temperature reaches 135°F.
